Dave was born in Grand Rapids and went to school both in Kalamazoo, as Bells Brewery was starting, and in Germany, where a love of Bavarian Bier und Kulture was solidified. With nearly two decades in the beer and hospitality industry, Dave is thrilled to no longer be wearing a tie to work. A fan of shade trees in the Biergarten, Tiger baseball, Steeler football, Chopin concertos, N.W.A. on cassette, and questionable clothing choices, he’s the man behind Gemütlichkeit in Cedar Springs.

Matt

Barley Malt & Hops Wrangler

Matt comes to Cedar Springs from St. Louis, MO with two decades of professional brewing experience, most recently with Schlafly Brewery and Bottleworks, the city’s largest craft brewer. Originally a Taurus from beautiful Northwest Indiana, he enjoys fishing and camping with his family, long walks on the southern shore of Lake Michigan while watching the sun set. “I’m thrilled to be in Beer City, Michigan and close enough to cheer on the Bears!”

Brian

Brewtus (Brewer)

Brian grew up a Grant Tiger before graduating from Grand Valley State and working for the University.
He transitioned into commercial brewing in 2013, working for a nearby, award-winning brewery before joining the Cedar Springs Brewing team.
He loves spending time with his wife, either traveling or lounging about, and enjoys camping, hunting and bending elbows around a bonfire.

Kelley

Hostess with the Mostess

A Rockford native, Kelley has been surrounded by the restaurant and beer business for over 20 years, starting with her first job as the donut maker at Robinette’s Apple Haus as a kid. Now, she helps keep track of all the friendly faces and visitors from the front door to the White Pine Trail. In her spare time, she chases her twin boys, tends the garden and sharpens her foodie skills.

Lisa

Princess

Lisa grew up as a Buckeye in Toledo, Ohio and moved to the area in her early 20s. She has worked in the administrative/H.R. side of the restaurant industry for over 20 years.

A graduate of Aquinas College with a degree in Education, she’s continued working in hospitality administration while volunteering as a high school tutor and literacy coach. Fall is her favorite season, not only for the beautiful colors Michigan has to offer but for college football.

Hillary

Good Witch of the North (General Manager)

Hillary is a North Kent County native who brings 17 years of industry experience to the CSBrew team. A Ferris State Bulldog alum, she has a degree in Applied Speech Communication and enjoys baking, experimenting with food, and her man. She spent the last ten years with a prominent local restaurant chain in downtown Grand Rapids and loves learning new things about beer, food, and wine every day. She is focused on making our enterprise even more environmentally sustainable.

April has been in the industry since she was 14, scoring her first restaurant job at an ice cream shop/cafe in Newaygo, where she also graduated. She knew the industry was for her. She’s a mom to some crazy kiddos, who make life very interesting at all times. In her free time, she loves to watch football, “Go Pack Go!,” although the game isn’t quite what it used to be. She also enjoys hanging with my family and friends, traveling, and cooking.

Sous Chef

Chelsea graduated from Fremont High School in 2012 and started working for a local bed and breakfast. Shortly thereafter, she moved on to a restaurant as a dishwasher, where she found her passion in the hospitality world. Over the next five years, Chelsea worked various jobs in hospitality, steadily working her way up to running her own kitchen. Her passion is bringing a unique flair to classic dishes and she’s excited to be part of the team in Cedar Springs. In Chelsea’s spare time she enjoys being outdoors, hunting, and fishing. She also enjoys spending time with friends, trying new foods – and delicious beer from all over Michigan.

Hospitality Lead

Amanda was raised in the suburbs of the D and moved to the west side of the state two decades ago. Her family’s love of food and music set the standards high for Amanda’s passion for both. She worked in the food industry for 12 years, and has been involved in the craft beer world for 6 years. She’s proud to be an original CSBrew Team member. Amanda spends all her free time catching movies and eating an incredible amount of popcorn with her son, reading as many books as she can, attending concerts with friends and family, being a zombie, Pistons, and comic book enthusiast.

We’ll be creating a variety of great beers, of course, but we will definitely be focused on some traditional Bavarian, German and European styles that are less common in the craft brewing world. Küsterer Biers are Bavarian and German styles, named for Christoph Küsterer, the original German brewer in West Michigan, who founded a century-long brewing legacy in our region. Cedar beers include American craft styles and influences from around the world.

We occasionally have a very limited number of kegs available for take out sales. You can inquire by contacting sales(at)csbrew(dot)com. We recommend at least two weeks’ notice and please note that not all sizes or keg styles are available at any given time.

Our head brewer is Matt Peterson, most recently with St. Louis Brewery / Schlafly Brewing Company, out of St. Louis, Missouri. He is originally from Northwest Indiana.

Our head chef is Brandon Miller, a graduate of Le Cordon Bleu College of Culinary Arts in Minneapolis/St Paul, Minnesota..

We are also a licensed Small Winemaker and Small Distiller, however we have no plans to distribute those products beyond our location.

Our brewhouse will have a capacity of 15 Bbl (465 gallons). Our initial production capacity will be around 900 Bbl per year.

We will have approximately 150 seats indoors and another 70 outdoors in the Biergarten. Our side Bavarian Room seats 36.

The Biergarden is open when weather allows for hikers, bikers and snowmobilers on the White Pine Trail.
